What's a Back Pocket Dinner?

It's DAY 1, and we start with one of the most important lessons I have ever taught: The importance of having a back up plan for dinner.

When it comes to making dinner, have you ever:

  • Had zero time to shop--let alone cook
  • Been totally out of ideas
  • Realized the meal you were going to cook is too time-consuming, or the chicken expired (or is still rock-hard in the freezer)
  • Looked in the (full) pantry and seen nothing to eat
  • Felt overwhelmed and/or exhausted and/or resentful

YOU ARE NOT ALONE! We all have days that like, me included.

Today's lesson is the solution: The Back Pocket Dinner.

No matter who you are, or how organized you are, life is guaranteed to throw you a curveball or two at some point. And when that happens, you need a failsafe dinner. That's what I call a Back Pocket Dinner (BPD). Everyone needs one....or four!

A BPD is a delicious meal that can be cooked in almost no time and with the food that's already in your pantry and fridge. It’s your back-up plan for when the regular dinner plan goes sideways. 

The real key to a great Back Pocket Dinner is to choose something seriously simple but still satisfying and keeping its ingredients on hand all the time. Here are three of my faves (including today's Cheesy Dutch Baby).

When you have a BPD, you're covered for all kinds of dinner catastrophes (expired chicken; long commute; sick child; last-minute science project). When you can cook a BPD, out of ingredients you simply have on hand, you have a SUPERPOWER.
